Born beneath the sun-soaked eaves of a rustic Spanish kitchen, Ernesto was the beloved only son of Mamacita, a formidable matriarch with flour-dusted hands and a heart full of wild levain. Wishing him a richer life beyond the humble stone oven, she sent him — basket and all — across the sea to The British Isles.
There, he was taken in by the upper crust. Raised among tweed waistcoats and linen napkins, Ernesto learned the etiquette of tea, the protocols of pudding, and the gravitas of a properly proofed loaf. Yet, in the quiet hum of manor kitchens, he never forgot Mamacita’s starter — or her sacrifice.
When he came of age (and crumb), Ernesto set forth with walking stick and banneton, travelling the length and breadth of Britain. From the Cheddar caves of Somerset to the onion fields of Lincolnshire, he sought out only the finest locally sourced ingredients, determined to weave the soul of his madre into every bite — and thus bridge his Iberian heritage with his adopted island home.
Today, The OG is more than just a loaf. He is a tribute to tradition, a champion of craft, and a gentleman of the grain.
The Original Gentleman requires little embellishment, yet welcomes fine company. His crust bears the mark of time and craft, his crumb a balance of tang and poise — equally suited to breakfast or banquet.
To begin the day, he is best enjoyed warm with cultured butter, marmalade, or a spoonful of honey — a simple but dignified affair. At luncheon, he forms a most excellent foundation for poached eggs, smoked salmon, or a sharp cheddar sandwich taken with quiet satisfaction.
Come evening, he finds harmony beside soups of roasted tomato or leek and potato, and proves a steadfast companion to charcuterie and cheese alike. Ever adaptable, ever assured — a loaf for all tables of taste.
When the hour grows late, he pairs handsomely with a glass of red, a measure of tawny port, or a strong black tea — the drinks of quiet contemplation and earned repose.
The Original Gentleman is best enjoyed fresh within 24–48 hours of his arrival — his crust proud, his crumb lively. To keep him in fine form, rest him cut-side down upon a board or wrap him in paper; never plastic, for it dulls both spirit and crust alike.
Should the days run on, he remains ever-dependable: warm him gently at 170°C for 6–8 minutes to revive his noble character. For longer keeping, slice before freezing — he thaws gracefully, ready to toast and serve as if newly baked.
Avoid refrigeration; it tempers his tang and lessens his charm.
