THE SEEDED SQUIRE

Toasty seeds, malty rye warmth, and a well-rounded, tangy crumb

The Seeded Squire is the ever-dutiful companion of the aristocratic elite — a rustic, stalwart loaf that never seeks the limelight, yet always delivers nourishment and dependability. With a crust speckled in sesame, flax, sunflower, and poppy seeds, he is hearty, honest, and ever so slightly rugged. What he lacks in pomp, he makes up for in purpose.

He’s the kind of bread that rides out at dawn, attends to the horses, and is back in time to serve at the manor’s table. Unassuming yet essential. The quiet backbone of the bakehouse.

The Seeded Squire finds purpose in honest company and simple fare — never one to boast, yet always ready to complement a fine spread. Lightly toasted, his crust crackles to reveal the wholesome heart within, best met with a pat of cultured butter and a moment’s pause.

At breakfast, he proves steadfast beside soft-boiled eggs or a gentle drizzle of honey over ricotta — an understated start to the day. Come midday, he shoulders the weight of smoked ham, mustard, and pickle with quiet pride. By evening, he stands loyally beside hearty soups and stews, ready to soak and serve without fuss.

When gathered among cheeses, he is at ease — holding his own beside sharp cheddar, nutty comté, or a creamy blue. And as the day draws to a close, he’s best accompanied by a malty ale, a dry cider, or a strong, well-brewed tea — the drinks of the working gentry.

The Seeded Squire is best enjoyed fresh within 24–48 hours of his arrival — his crust proud, his crumb lively. To keep him in fine form, rest him cut-side down upon a board or wrap him in paper; never plastic, for it dulls both spirit and crust alike.

Should the days run on, he remains ever-dependable: warm him gently at 170°C for 6–8 minutes to revive his noble character. For longer keeping, slice before freezing — he thaws gracefully, ready to toast and serve as if newly baked.

Avoid refrigeration; it tempers his tang and lessens his charm.
